I'm pretty diverse there. It's probably easier to list what I don't like. I like folk stuff, jazz, some young people R&B stuff like Khalid, old school country (not 90's country though), I enjoy some softer rock like some Fleetwood Mac songs or "Fast Car" by Tracy Chapman.
All of that to say I'm open to just about any sound/style, although I've never particularly liked screamo/metal stuff. I like to hear and understand most of the lyrics.
Zeppelin and Pink Floyd are pretty solid starts in my opinion. Each of those has quite the range of types of songs. The one thing I appreciate the most about classic rock is the audio quality. In the last few years I have really gotten into Steely Dan. Those guys are hard to categorize. Lots of funky elements to their music, but the audio quality is sublime.

Don't forget about .38 Special. They've got some great classic rock songs.

Van Halen 1, Led Zeppelin 1, Black Sabbath (self titles), and Guns n Roses Appetite for Destruction albums would be my starting points.
When I think of classic rock, I think of a few different breeds:
Psychedelic stuff (Zeppelin, Jimi Hendrix, The Doors, Pink Floyd, late Beatles, Deep Purple, The Who)
Jazzy Stuff (Chicago, Weather Report, Frank Zappa, Toto, Steely Dan)
Bluesy stuff (Cream, The Rolling Stones, Led Zeppelin, Derek & the Dominoes, George Thuroughgood)
Hard Rock (Zeppelin, early Van Halen, Foghat, Nazareth, ACDC)
Southern Rock (Skynyrd, The Outlaws, Molley Hatchet, Allman Brothers)
Synthy poppy stuff (Boston, Journey, Styx, White Snake, later Van Halen)
Metal (Iron Maiden, Judas Priest, Black Sabbath, Dio, Metallica)
Funky stuff (the Meters, Sly and the Family Stone, James Brown, Joe Cocker, Otis Redding, Wilson Pickett)
Folky stuff (Buffalo Springfield, Bruce Springsteen, The Eagles, Jim Croce, Crosby stills nash & young)

Start with Boston's first album. It was issued to every teenage boy when they enrolled in HS as part of the welcome pack, I believe.

type in classic rock playlists in Spotify or other music service and see what you like.

Roughly the peak IMO. I'd start in the 60's.

Start with some of the core groups: Zep, Sabbath, Santana, Deep Purple, Hendrix, Yes. Then migrate to the great guitarists of the genre: Clapton, Duane Allman, etc. Then sample the Southern Rock groups, the Woodstock/SF Bay Area groups like Jefferson Airplane, Detroit rockers like Ted Nugent. Then move into the more dramatic rockers like Bowie, Alice Cooper and Mick Jagger. And at some point make time for the technical bands like Chicago and Steely Dan. This should keep you busy for awhile.

I was always a guitar driven blues rock kinda person. So my big ones are Jimi Hendrix, Cream/Clapton, Allman Bros., ZZ Top and Stevie Ray Vaughan.
