Pulp Fiction. I grew up in a Catholic, Black and White/right and Wrong environment. After Pulp Fiction, I learned there were shades of grey.

White Man's Burden - It was a bit heavy handed with some of the racial stereotypes and it wasn't that great of a movie, but it did make me see some things differently

Jacob's Ladder, Inception, Matrix, Shutter Island, Total Recall, Donnie Darko...there are a number of movies that look at the mind's perception of reality versus what is "real" and then some that take it to the next step of questioning how one could ever truly know the difference

Funny, I thought about that movie and that scene particularly as well.
