Got to go with Peter O'Toole as Lawrence. His performance (more drunk than not on set) was mesmerizing and almost a revelation in terms of acting. As fantastic as Peck was that year in "To Kill a Mockingbird", O'Toole was robbed of the Oscar that year.

No way to pick just one (or even a few) so I'll just throw out two I really loved:
1- Duval in Lonesome Dove. He was absolutely perfect.
2- Bogie in The African Queen. Played against his usual persona and did a damned good job.
