Several of the actors have already confirmed that was the scene at the start of the last episode in their apartment. They had to come back and film the rest of it like 5-6 weeks later.

My take is that is the moment Gus does not let anything get in his way. There is no room for error to accomplish his goals. He is being exposed to his ‘weaknesses’ but knows he must walk away (no room for mistakes), he is now hyper focused on the end game..
Also, they made a point of showing Gus staring down into the swimming pool where his partner got plugged. Clearly had some flashbacks, and wanted to go play human for a few minutes. It was another great reminder of how this psychopath maintains an air of sophistication and charm outside of the game. But of course, he remembers why he can't have anyone normal in his life.
And LOL at Ham. Utterly indefatigable troll.

Link? cause I haven't been able to find shite about it except the same damn interview from Bob posted on 20 different websites. The stories that I've read did say Fabian was on set with Bob/Rhea so that would make more sense for last week's episode instead of this week's.
Also, explains the mid-season break.

Yes, but I want to make sure nobody is looking for that moment of, “Is that where he’s getting ready to go?” Because it’s not there. It was a very difficult scene to shoot with a lot of coverage [the camera filming one actor at a time]. We had shot the majority of Bob and my stuff, and then we had to come back and turn around do Tony [Dalton]’s side.
