As I stood in line for a Chinese-Caribbean food truck with a country boy cook, I realized it would have made so much for sense for Bobby to have a food truck than a full restaurant
Logically, it makes much more sense for a 21 year old to have a food truck than a restaurant. You could have a lot of fun with Hank being completely overwhelmed by the idea of a food truck. You could have had food truck hijinks. And you could have given Bobby something to work towards (having a restaurant) rather than him starting out on top

I think Judge commented on this, saying they wanted Bobby to be kind of not what people expect, to be extremely hard working like his dad and to be successful without a college degree, kind of the opposite of other people his age, that may look down on him because he is not in school

They did a food truck episode where Hank ran it. Sugar foot food truck. So he would have understood the struggle so a restaurant is a bit different.

Yeah, I was thinking something simlilar.
But running a resturant where his "silent partner" owns everything was off and he is just paying the land lords rent for him. With only 3 employees.
It seems like he is headed for failure, doesnt really seem like he is making any monies either. I think Connie likes him, but if he doesnt make any money, she Aint stick around.
But it works for the show.

Chan Wasannasan cannot run the restaurant without Bobby. Eventually Bobby will realize he has all the power and at that point will either get more of the company or split for greener pastures.

It’s basically Hank and Buck’s dynamic when you think about it. Chane (and yeah he’s in college so it’s to expected) stays partying and chasing trim and just makes sure the checks get signed and Bobby keeps everything afloat.
Chane is living Buck’s dream though- running the hoes in a world where non-monogamy is mainstream and popular
