Always loved the scene of Luke when after he has the disagreement with his uncle he storms out and the John Williams music starts as he stares at the 2 suns. Just speaks to him wanting more and having a destiny beyond Tatooine.

Good ones listed. For something more recent, I love the T-Bone scene in Hell or High Water.

Lots of great ones already mentioned. I’ve always thought the closing sequence of The Kingdom is great with both sides committing to “kill them all”.
