I think he meant, that he couldn't "read minds/souls", not that all superhuman aspects are gone in human form.

We think he can only read minds in smoke form. He certainly has other powers in human form, like teleporting.

He was being shot at and disappeared, plus he did the same with Richard when he gave him the cross, and he's been shown to do this in other forms as well (particularly Christian Shephard).
