How tf was Jon so certain Gendry was the fastest in the group? Because he's the youngest? Did they lace up and record 40 times before they left Eastwatch??

I took it as his way of convincing Gendry to go. Jon knew what everyone else's abilities were in combat. Better to send the young pup off running.

They reacted to 6 random dudes on its back pretty well this episode so I don't think they are as picky as you think. Unless you think all of them are Targ
With tyrion he was freeing them and they could sense that he wasn't there to harm them
