I don't see her leaving Tyrion behind. I think she knows she'll need someone that knows the political layout of Westros better than just Jorah.

I think he's trying to find a way for the Show to ignore Snows death for an extended period of time
"I'm done with the show/playing Jon." Technically true if he hasn't inked a new contract. In this case, he is not currently employed by HBO.
Maybe we get the next book, readers see what's up, then we get the contract announcement. Boom. Snow fans have a reason to live again, and maybe it triggers a second wave of book sales.

I don't know. It seems like they'd harp on the lie. He won't get sued or anything, but they'll rip him apart.

Don't worry, Tyrion won't be having none of that. In the books his main goal is to get back to Westeros so he can rape and kill Cersei. So I'm sure he is pretty hyped about that.

They hadn't had screen time to establish the fact that Kevan has been doing a serviceable job of running the realm. That is what I remember most about Varys' assassination, him saying (paraphrasing) "You've done a good job of making the kingdom stable, but we need instability to open the door for the true leader".
No reason to squeeze that into this finale, but it should be a bombshell moment around the third episode of next season.
