For starters, I loved almost every scene that involved Lionel Hutz, voiced by the great Phil Hartman.
Lionel Hutz montage
The opening that was a parody of the beginning of Raiders is still funny af
Homer, Krusty the Clown, Sideshow Bob, Mr Burns, Lyle the monorail dude, and Ned Flanders were great characters

The very first one that came to mind was the Lisa Simpson birthday episode with the fat bald guy who sounded exactly like Michael Jackson.
"Lisa it's your birthday, happy birthday Lisa."
Second is when Mr Burns turned green and everyone thought he was an alien on one of the halloween specials.

“I tried the broccoli again.”
“I discovered a meal between breakfast and brunch.”
And many more I’m forgetting.

Far too many to choose from. Of minor characters, Lionel Hutz was great. Milhouse, Chief Wiggum, Ralph, Rainier Wolfcastle, the list of great minor characters could go on for a long time.
If I had to try to pick a class, the Treehouse of Horror episode where Mr. Burns is a vampire is my favorite TOH episode ever. Couldn't find the whole thing, but:

When Homer makes fun of Burns's haircut
"It's no different from the basement in Grampa's rest home."
When Grampa busts in with the stake yelling "we have to kill the boy."
"I guess killing will be fun enough"
Other favorite episodes, when Homer becomes union boss, Homer's sexual harassment, Bart vs Australia, when Homer is concerned Bart is gay, Cape Feare, when Ralph is in love with Lisa. So many great ones.

When Homer and Bart were playing the boxing video game.. kinda like mortal kombat boxing
Bart and his buddies all chipped in to buy the radio active man comic. They fight over it during a storm and it falls onto the ground and lightning strikes it
Most of the early Halloween specials were good

That's a pretty good chart. Would probably move "golden years" a bit left. Season 2 was were it started.

Mark McGwire's quote when asked how he hits so many HRs was a great foreboding moment.
"Do you want to hear the terrifying truth, or would you like to see me sock a few dingers!?"
Someone (a poster here) once told me the Simpsons didn't get stale, we just stopped smoking weed.

The Simpsons had a ton of sign gags.
My favorite scene from The Simpsons is from season 7, '22 Short Films About Springfield - Steamed Hams'

Sideshow Bob singing HMS Pinafore is something I didn't appreciate until I was older. This was one of the best episodes of the entire series.
