I hate poorly-defined criteria here so trying to make it clear. Lurked for a long time and then got huge.
Motivated by my submission: Samuel L. Jackson.
Earliest credit is 1972. A lot of minor roles until…1994, 22 years, Pulp Fiction.
Another:
Tommy Lee Jones. From 1970 until either Lonesome Dove (1989) or JFK (1991) and then pretty huge.

His big break was Coal Miner's Daughter in 1980.

As far as actresses go, Viola Davis comes to mind. Since the mid-90s it was mostly bit parts, tv guest spots, and theatre work.
Then, in 2008, she's in Doubt. Another "bit" part. Shes only had 1 scene. But that scene...
In those 8 minutes, she goes toe to toe with Meryl Streep and the two of them create one of the most powerful, natural, well-acted scenes I've ever watched. Instantly propelled her career.

There is a long standing joke in entertainment... "I'm an overnight success, twenty years in the making."

Anthony Hopkins
Was in tons and tons of TV movies in the 70s and 80s and Shakespeare plays, even playing Hitler with an English accent, (Downfall was a remake of The Bunker). OG Hitler reacts.
Then Silence of the Lambs in the 90s and his Hollywood roles.
He was always a fine actor and did Elephant Man but it was late in life in the 90s where he became a Hollywood star.

Truth. Two Guys, a Girl and a Pizza Place ran for a couple of seasons, didn't it? Waiting was a cult classic but never saw any solid success until it was available on DVD. Even Just Friends was a sleeper hit out of the theaters.
His star didn't blow up until The Proposal, I'd say.
