Buddy Ryan and Bud Foster are the two that come to mind first.

Why?

As a defensive coordinator at Alabama from 2008-2015, his defenses were nationally ranked as follows:

2008: #7
2009: #2
2010: #5
2011: #1
2012: #1
2013: #5
2014: #12
2015: #3

And in the SEC they were ranked:

2008: #1
2009: #1
2010: #1
2011: #1
2012: #1
2013: #1
2014: #3
2015: #1

Venables is right up there with Mcbride, Andrews, Foster and I hate to say it but Sandusky too.

Gene Chizik and Bob Stoops were awesome too but they had relatively short DC careers

And a frickin' trainwreck at USC. His defense let Oregon hang 62 points on them. The MOST EVER a USC defense has given up in 120 years of football.

His defense gave up 730 yards to Oregon.

The most ever a USC defense has given up by a large margin.

In back to back games against the lowly Zona schools, USC's defense gave up a combined 84 points.

Under Lane Kiffin with his Dad, USC's defense was a joke.

wouldn't matter if he was the GOAT.

He should be ommitted from the rankings.

I know you're just trolling here but please see my sig.

Also, Bo Pellini put together some nasty defenses for LSU.

Because offenses have evolved over the past two decades it's kind of hard to assess "tops" from different eras. And it's hard to engineer a defense for every type offense that a team faces across a season, i.e., there will be some 'not a good matchup.'

Here's my list (no particular order):
Dick Bumpas
Venables
Chavis
Muschamp
TBD

Bama has lots of statistically great D's. But with all the talent, they seem to get lit up by almost every offense they face that has a decent scheme and talent.

Muschamp was a legit DC.

Chavis (before he quit giving a shite) had some salty arse defenses at Tenn and at LSU. Venerables makes some incredible schemes. Who was tOSU D coordinator in the early 2000’s? Those teams were fricking filthy
