The only interesting fight for Connor is Diaz 3 in my opinion.

Conor was finished when he stepped in the ring with Khabib. I think he has too much pride to fight someone ranked #6-#15 in a meaningless fight. Dude is such a narcissist he'd rather get KO'd by a top 3 guy and make excuses instead of fighting a lesser fighter on his level.
I even question the "legacy" people talk about. He had a 1 year peak which he fought Nate Diaz 2x, Jose Aldo, and Eddie Alvarez. He then spent 2 years pumping up this "legacy" only to get destroyed by Khabib. He did nothing during those 2 years. Diaz, Aldo, and Alvarez have clearly spiraled since those fights as well. Almost like the dudes legacy is beating fighters on their way down.

Nobody wants to see another Diaz fight. And Conor really doenst need to be fighting at 170 again... Ever.
He really needs to pull a Max Holloway and go back to 145 where he could have some success. But that division is not nearly as hyped up as the 155 division, so who knows. Plus I'm sure the weight cut is terrible at that weight.
If he wants to stay at 155, and he can actually recover all the way, then he needs to get a fight with Justin Gatheje, who will do nothing but bang on his feet with Conor.
If Justin KOs him (which would probably happen) then that's it for Conor at 155 and he should either go back to featherweight or retire and fight Jake Paul. Thats basically where he's at right now.

Physically Conor could be fine. Like everyone else mentioned, will he regain his edge.... between his current pay days, whiskey money, etc... doubtful he will put in the work needed.

Subconsciously he’ll doubt planting his feet continuously, he’ll always be slower than before, in a game where hundreds of a second count it does make a big difference

I have no interest in seeing him ever fight again, but I don't think that I understand just how much of a guaranteed draw he is in outside of the US, mainly Europe. Because of this I think he will get as many fights as he wants. I just don't know what draws him to keep fighting at this point.

There's nowhere in Europe, outside of maybe some dungeons in Russia/Eastern Bloc, that Conor can go to to get better.
But that's also his biggest problem. He won't go to a new coaching staff/camp to get the toughness and fight Iq that he needs.
Porier goes to ATT wherre high level savages are around every corner. Khabib went to AKA with the best wrestlers in the world. The list goes on and on.
There are a dozen gyms in America he could go to to get better, but he won't do it. Dude needs to be training at altitude as well, but in the 2nd DP fight, he was training in Southern f-ing Portugal with a bunch of young Euro fighters who were no challenge to him.
He probably doesn't want to be too far away from his home base so he can run his businesses better, but that's seemingly been pretty detrimental lately.

Dana and Conor’s egos won’t allow him to go out like that on a freak accident. I don’t think he’ll be a true title contender again but rematches with Diaz and Poirier would still draw.
