I actually agree with you that they aren’t the best and that the Saints are the best team in NFL right now.
EPL has the best system. Play everyone home and away. Best record is champion.
Problem in college football is that playoffs are needed as there are too many teams to have true cross-conference play.
NFL has too many to play home and away. Even in the NFL a playoff is needed.
Without a balanced regular season a playoff is needed. No way to say a 13-0 Pac 12 champion is really better than a 11-2 SEC champion without playing the game.

This is correct.
Allowing ESPN to get four more media darlings in the playoff annually will not do anything to improve CFB.
Like another poster said, recruits have figured out the system as it stands now is only there to benefit about 5-7 teams, and that's it. Everyone else is playing for scraps, or they have to go unbeaten and win their CCG (unless they are a brand team).
Hell, if you are an SECW team, your task now is beating Bama twice annually as well, which is impossible. Got to beat them in the regular season, and win the SEC for the right to rematch them in the playoff. This year we moved to "if they lose the CCG, they are still in", so now SEC East teams like UGA face the prospect of beating them in the SECCG, then having to play them again in a couple weeks.
Expanding this to 8 teams will do NOTHING. And if you think ESPN would put a UCF in an 8 team pool you are kidding yourself.

I’m torn.
An 8 team system does cheapen the regular season even more.
It does however mean it isn’t as big of a travesty when the committee does something stupid like put Notre Dame as the 3 seed.

Not really. It shows the massive hole in the system.
They say they want the best teams but then turn around and discount certain teams b/c "they don't deserve it" based off of completely arbitrary reasons.
How the hell do you know who the best teams are if they can't all play each other? Why do some teams get to have a loss or 2 and still be considered when teams in the exact same conference would never be afforded that luxury?

That would kill college football. If you eliminate G5/FCS game a lot of average CFB teams are going to go from 9-3/8-4 to 6-6/5-7 or worse once you eliminate the rent-a-wins
