I’d be curious to know how many full games Henry or any of the other players mentioned played. I’m sure Derrick Henry didn’t play the entire games when Alabama was blowing a team out

Only 8 players have rushed for 2000 yards in the NFL. Only one of those in less than 16 games, OJ Simpson. That is also the best season ever in terms of YPG rushing at 143.1.
1 1973 O. J. Simpson 2,003 - the only player to do it in 14 games or less
2 1984 Eric Dickerson 2,105
3 1997 Barry Sanders 2,053
4 1998 Terrell Davis 2,008
5 2003 Jamal Lewis 2,066
6 2009 Chris Johnson 2,006
7 2012 Adrian Peterson 2,097
8 2020 Derrick Henry 2,027
Only two of those players had 2000-yard seasons in college. Henry and Sanders. Of note, no college player ran for more than 2000 yards before 1981 which was an 11 game regular season. 1970 appears to be the advent of the 11-game regular season in college. OJ played at USC during the 10 game regular season era.
Sanders only played running back in his last seven high school games but still ran for 1457 yards. So yeah, Henry is it.
Henry's high school career was exceptional, though.

Derrick Henry was a four-year starter at Yulee High School in Jacksonville, Florida.
As a freshman in 2009, he ran for 2,465 yards and 26 touchdowns while averaging 7.9 yards per carry.
The following season, he recorded 2,788 yards and 38 touchdowns while averaging 8.9 yards per attempt.
As a junior in 2011, he put up 2,610 yards and 34 scores. He subsequently had perhaps the greatest season ever for a running back as he recorded 4,261 yards and 55 touchdowns his senior year.
In his high-school career, he recorded 1,397 carries for 12,124 yards and 153 rushing touchdowns, while averaging 8.7 yards per attempt. He set the Florida high school single-game record with a 510-yard performance once. His 12,124 yards broke Ken Hall's all-time record.

He really wasn't the main guy until his last year. Yeldon and Drake got most of the snaps in 2013. Yeldon and Henry were about 50/50 in production in 2014. I think Drake had a bad injury one of those seasons. But 2015 is when Henry rushed for over 2k. He didn't play a ton in some of those blowouts. A few stand out. 13 attempts for 52 yards against ULM in 2015. Bama won 34-0. 9 for 68 against Charleston Southern, Bama won 56-6. But he went off on just about everyone else from the middle of October through the championship game against Clemson.

Both the NFL and college are making this an easier accomplishment going forward.
The NFL added an extra regular season game, and college has added multiple extra games over the course of so many years. Not only that, most, if not all, defenses are not recruited/drafted/schemed to stop the run first.

?? that is a crazy stat. Probably didn’t even have to wash his uniform because he never got tackled.

Sanders High School coach said he was too small to be competitive and refused to play him until their starter got hurt in the 4th game and he didn't have another choice.
You just know that whomever that guy starting in front of Barry, he's at the bar to this very day telling everyone who will listen about how he would have made the NFL until he got injured.
"I'm telling you, before I blew out my knee, I was better than the Barry Sanders. That's right, I taught him everything he knows. He was my backup you know"

Henry is everything people thought Fournette would be, but never was.

That just balances with teams not running the ball, and really not being built to run the ball or scheming to do it, like they used to
