I will seriously never understand why there are separate gender leagues for chess, billiards, poker, etc

May have started when women were not allowed to compete and or made to feel very unwelcome. The better question is why a man wearing a dress thinks he should be allowed in women’s competitions

I'll take a crack at that.
Re: billiards, testosterone is correlated with hand-eye coordination. It makes sense when you think about evolution why that would be the case. It's also another reason steroids/HGH help hitters in baseball so much.
For chess, it has to do with IQ. What we know about males vs. females in IQ at the population level is that males tend to have more at the extreme ends of the bell curve. In other words, there are more men at 140 IQ and 60 IQ than women, again at the population level, although average IQ is equivalent for both sexes. Women also tend to better verbally whereas men tend to do better with spatial reasoning (which is in large part what chess is).
I also assume it has to do with sheer numbers. These are hobbies males are for more interested in than women.
Poker, I'm less sure about, but assume it has to do with similar reasons as chess.
At any rate, this is my favorite headline of 2023 because of the different layers of melt that will be caused.

On top of what you've already illustrated, I also think womens-only leagues would encourage more women to join and play chess/darts/billiard/etc especially at the lower levels. A lot of women probably wouldn't be interested and possibly intimidated if they were the only woman going to tournaments and stuff surrounding by a bunch of guys
