True...well you could try doing one of those help desk jobs at a local community college or manning the library or something. Although they probably prefer to use students, a community college has all walks of life so that might be a good choice if you live close to one

I'm sure you already looked into it but can you just pick up overtime at your job?

A caveat to this would be to look to advance yourself so that your marketability and salary would increase with an addition of certifications/licenses/proficiencies.
So whatever your profession, try to go to your supervisor and see what the fastest way to a vertical career move would be. Improving yourself and your career and getting a salary bump would be much more efficient than getting a part time gig for minimum wage IMO

What about waiting tables? You'd have to work some weekends. Something else along those lines would be working for a catering-type company, or a reception/event hall. Most events will be either weekends or nights.
Warehouse or stock at a grocery store or large retail, mostly takes place at night.

I work for a small company. (8 office employees) We have about 50 guys out in the shop. I'm the GM and I report to the owner. Nowhere to move up really. I could just ask for a raise next year when I'm up for review, as I just got one a few months ago.

OK, this is gonna sound weird but it worked. My nephew (who is now a millionaire) wanted to make extra money while he was in college.
He knew a school teacher in his area. He printed up some flyers for her to pass around at her school. The gist of it was if you wanted your car washed and/or oil changed while you were teaching leave your keys with the teacher liason on the designated day.
He made a bundle. The trust factor was the teacher. The women loved the idea of going to school in the morning with a dump and leaving in the afternoon with a great looking car.

Pizza Delivery.
Flexible hours. You're out of the store mostly and some places let you keep all tips. I freaking loved it in high school and college. Always had a wad of cash in my pocket.

There's a guy in Downtown BR that does this. He works over at 8th and Main but will walk anywhere downtown to pick your car up.

I would think that just about any restaurant in the world has a shift that begins around 5 and ends around 11.

I'm no waitering expert, but I also imagine that most waiters want the weekends to make more money, and the OP would be wanting to take the weeks. If anything, he would be helping a waiter who really hates weekdays and not hurting their weekend profit.
Of course, if they are short on the weekend, he has to come in, but that isn't so bad when you are getting paid more.

So my sister made a good chunk of change helping with boarded animals at the vet clinic while she was in high school. She'd go in like 6 am and got paid by the day (there is also a night shift after clinic closes). Basically she cleaned out cages, walked dogs and refilled food/water. It was easy and as soon as she could finish she left without a cut in pay. Maybe check that out?
Whatever you do, def make sure it is diff than what you do all day. I took a consulting gig last year in my same field that paid well (though consultant taxes are a bitch). My problem was after working all day I got burnt out pretty quick because with consulting it's like my workday lasted 15 hours.
