Well, they are supposed to "randomly" choose an appraiser.
But honestly, the banker perhaps could care less, he isn't making any money off the PMI. Now, if he's getting kickbacks from the PMI provider...

If you decide to get a new appraisal I suggest you begin with correct information. You have several options and they begin with the deed used when you purchased the property. The deed contains a description and this is the key to what you own.
You can do the research but more than likely after a full day you still won't have anything. If the assessors office is friendly they may help with the research, but don't stop at their computer generated map.
the best option is to bring your deed to a surveyor. You can ask he/she just to research your property to get a better understanding of the size of it.
Many will have the information already in their office and may not charge you anything or for a small fee do the courthouse research next time they are there.

Get a copy and see how it looks.
This. If the legal description is a lot number instead of a metes and bounds description, there is a subdivision plat on file at the courthouse. No need to pay for a survey.

Many parishes have a geoportal website that you can zoom in and see your site dimensions

These geoportal websites are mostly from the assessors office and it can be wrong. Get the controlling documents from the clerk of court.
