These are contradictory. If you feel so strongly that it will not lose value, then you are not selling anything or pulling it out of your portfolio. You’re rebalancing/transferring/diversifying.

First, this is a poor decision. I have a Rolex but it was a gift from my father. I rarely wear it and certainly wouldn’t pay $30,000 for it. It’s nice but it’s not an investment.
If you are going to do this, the 12 months interest free is good. Take that. It sounds like this would be most of your disposable income but doable. You could also apply for a new credit card with a 12-15 months interest free incentive. They are out there. This gives you a cushion if you have an event come up while paying off the watch. Hopefully you have some reserves you could use if you had a real emergency. If you don’t, forget about the watch.
