what is the "M" in MNC?

It goes back to when it was simply voted upon. But, it still applies a bit because the NCAA does not actually recognize a National Champion in FBS

Since football championships are not officially recognized by the NCAA (the big boys anyway), it's referred to as the Mythical National Championship.

It's best used to apply to CFB seasons before 1936.

Until there is a playoff system, it will always be MNC.
Don't kid yourselves that it can;t happen again. Just this week the AP & Coaches poll doesn't agree. The computers can't guarantee agreement.
Imagine if LSU, Oklahoma, & Wisconsin are all undefeated at the end of the season.
LSU beats Oklahoma in the MNC in a tough but sloppy 17-9 win. But #3 Wisconsin beats #4 Oregon 48-12. AP & BCS splits.
That's not mythical. That's probable.

Properly speaking, mythical should only refer to those seasons when nobody was playing for a national title to begin with--i.e., season before the advent of the AP poll in 1936.
