What is the key to stopping a running QB?

From what we have added so far and assuming we add at least one quality safety, will we have the pieces in place to effectively stop a running QB next year?

Stopping a mobile QB on pass sets - Disciplined rush lanes when pass rushing. Ends don't run past the QB. Close the net around him.
Stopping a mobile QB on designed QB runs - Staying true to your assignments at the linebacker and secondary level. Basically for the most part, your defensive line should handle the back on reads and options which means the QB belongs to the linebackers and safeties. Tackle well in space. Don't cheat on the dive/inside zone play. If your man is the QB, take the QB. Don't take false steps inside.

Gap/lane integrity and run support from safeties and/or spy.

Don't let him past the line of scrimmage.

Only if they learn their assignments and play with discipline. Despite what rantards may say, we had guys capable of stopping them. Most of the failures happened when the defender just went in the wrong lanes, got to close to the LOS and got caught up in traffic, or overran the QB in the backfield leaving the edge wide-open. There were some missed tackles but that was not the primary failure on defense where that was concerned.

Well we can’t practice for a running qb bc we don’t have one on our roster..

I think you'll see a defensive role created that is a hybrid linebacker/coverage type that is solely responsible for spying the QB.
That being said, if they have issues throwing the ball you mush rush them. If they don't, you play zone coverage.

Think about how many true freshmen got experience in the front 7 this season and looked good. McKinley, Breaux, Reliford and Keys should all be much improved. Perkins was moved back to OLB where he’s always been more effective before he was injured vs UCLA. He has always been good at tracking mobile QBs when we haven’t had him playing inside.
We lacked a true space-eater at DT most of the season, so getting Guillory back and the portal DT from Texas, as well as the freshman Williams add that. We’ve also added athletic DEs via the portal to go with Reliford and now Shanklin.
Like you said, improvement at Safety will be the final key. We need Spears and Toviano to improve and to bring in help from the portal. If the staff finishes strong there in the portal, we should be MUCH improved vs mobile QBs. The ingredients should all be there.
