Might want to check the current polls. To answer the question though, Florida st. won the 1999 season (championship game Jan 2000), Oklahoma won the 2000 season (championship game 2001)

those rankings are from this week. the bar at the bottom is recent news, not news from 2000

Actually of some of classic game replays they do show scores from that year. Obviously what the OP is describing isn't from 2000 but its something I've seen in the past.
