They might play limited to no help on Simmons, but even that would be stupid, because he's not an outside shooter.
So much of his game is getting it and going in transition, it's pretty much impossible to keep the ball out of Simmons' hands for an extended period of time. Because a lot of the times he'll be the one brining it up the court.
Plus, if a team really did try to no-help deny him the basketball, he's bigger and more athletic than people so his teammates can still throw the ball up to him and he'll go get it.

While these Rant coaches laugh... Alabama gave LSU their first SEC loss in 2006 by going box and 1 on D Mitch in Tuscaloosa.

Really, John Wooden kept it simple decades ago when asked how he'd defend Pete Maravich. He said, "We'll try to hold him to his average and not let the others score much."
Maravich also played with a bunch of scrubs for the most part. I mean even absolutely dominating the game for 3 seasons, they never made it to the tourney. They had a losing record in the SEC his soph and jun. seasons.

Best way to guard LSU is when Simmons has the ball every goes help side except for Horsbys man. And the on ball defender for Simmons needs to sag off a little. I'd go under every ball screen set for him as well.
