Big 12 focuses on offense, not defense. It's a practical matter, they are taking in a lot of Texas area players, and there is more focus in high schools to run potent offenses. Lots of 7 on 7 stuff going on there. Technique and "systems" are a lot more developed.
SEC ball is more physical in nature, the local teams are physically oriented in their styles. We don't have (in La at least) near the emphasis on offensive technique in high schools, it's more a matter of trying to out-athlete each other.
Watch highlights of Fournette, Guice, Dupre etc from high school. They aren't running fancy plays, they are physically beating the other team due to being superior athletes.
Then go watch any number of these Texas schools, and the QBs they put out. Guys are finely honed in what they do, even if they aren't the best physical talents.
Your comparison of LSU and Baylor vs Texas Tech actually shows that point. They had comparable numbers vs a common opponent, yet nobody would say that LSU has near the "high scoring" reputation of Baylor. LSU didn't try to trick TT at all, they basically gave away the play before the snap, and still ran all over them.

Also, if you really want to compare, Baylor scored 63 points while racking up 680 yards with 368 rushing yards and 312 passing yards against Texas Tech.
LSU had 56 points with 638 yards, 261 passing, and 377 rushing.
So you have one game there, but not really a great measure.
How many more offensive plays did Baylor run?

They haven't played a game yet this year, slapdick.

They always struck me as kinda rapey

What's the difference in scoring in 10 minutes versus a minute?
9 minutes of your defensive play

Honestly, I think the pieces are there to run that "Spread Veer" system at LSU. Large O-Line, Blocking TE, balanced RB, and perimeter guys who can block. Harris would be a spectacular QB in that system as well. Your only drawback is the constant knock that it doesn't translate to the NFL, which is what this current offense hangs their hat on.

Not exactly. Its only one game.
Texas Tech gave up 63 points and 662 yards against Oklahoma State, and 637 yards against SAM HOUSTON STATE.
Also remember that Texas Tech beat Arkansas last season, and then Arkansas beat LSU.
So why was LSU so easily able to beat Texas tech?
A one game sample is meaningless.

Did you read at all? Or click links?
I've linked to 2011-2015. I have no concern for 2016 statistically speaking.

LSU plays ball control, which I prefer. I'd rather keep their D on the field the whole game
Why? If their offense gets on the field is that the doom of LSU? Is LSU's defense that bad? Or is the opponent's offense that good? Im confused about why we have to keep their defense on the field for so long.

Please provide some data to back-up your claim
God damn you.
2011
RYPA
11. Baylor 5.3
27. LSU 4.8
2012 RYPA
24. Baylor 5.0
68. LSU 4.3
2013. RYPA
13. Baylor 5.4
27. LSU 5.04
2014 RYPA
44. LSU 4.7
51. Baylor 4.5
2015
RYPA:
2. LSU 6.1
4. Baylor 5.9
Now lets look at Defensive RYPG from 2015:
There are 6 SEC teams with better rushing defenses than the ebst team from the big 12. I got bored and stopped. But feel free to complete all the data for this year and previous years
Defense RYPA:
2. Alabama 2.43
11. Mizzou 3.29
12. Ole Miss 3.29
19. Florida 3.53
31. Arkansas 3.76
33. LSU 3.81
35. Oklahoma 3.81
37. Baylor 3.84
40. West Virginia 3.95
41. Georgia 3.96
47. Vandy 4.02
56. Tennessee 4.19
Im sure youll find similar data. As I said, the difference in defenses faced more than makes up for any disparity between LSU and Baylor pre 2014

Okay, but Baylor also had a top 5 passing attack 4 out of those 5 years.
Thanks for providing data btw.

A lie? Baylor did average more rushing yards, passing yards, and points 4/5 years...and it wasn't even remotely close.
Maybe the SEC rushing defenses are better because everyone in the conference sucks at passing?
As said before, Texas QB's come out more refined and polished to transition into a aggressive passing attacks.
