sealing gaps between brick and granite counter top

what's the best sealant to use to seal up the gap between brick wall and edge of granite countertop...this is for my outdoor kitchen where the countertop butts up against a brick half-wall...I'm trying to stop rain from getting between wall and counter
the gap is anywhere from 0 to 3/8 inch in some places

I would use some colored silicone. It'll seal well and be easy to remove to re-do if necessary.
You may need to put some foam in the larger cracks before applying.

if wanting to "seal" it then silicone is going to be your huckleberry. To make it look clean up especially up against the brick, take the time to use masking tape for cleaner lines.

Clear silicone might look the best in this situation.

and tape off the brick first, as anything the silicon touches will stick and you wont be able to clean it off of the brick surface without it being a PITA.

yeah sanded grout caulk could look good too. and probably be water cleanup so less challenging to use than silicone.

Foam backer or you could just caulk it twice, first time a loose job to fill the gap in and the second time for cosmetics.
Depending on how exposed this area is, I’d consider something like NP1 or another high quality exterior caulk as it’s meant for the elements and UV.

More-flex by sashco. It has a mortar like texture but it’s an acrylic product.

Sanded grout caulk is your answer. I did the same thing in my outdoor kitchen and under my mantle on my fireplace, and you can’t tell the difference between the mortar and the caulk. It looks great.
