Saving peppers

What is the best way to freeze peppers? I started making chow chow and planted a garden (hot and sweet peppers) to support this. In the past, I’ve just dropped the peppers whole in a ziplock bag in the freezer and removed air by hand. I was told that the seeds will turn brown which I noticed too.
Ideally I’d like to make 1-2 large batches after the summer/growing ends.

The only peppers I tend to save for later use are bell peppers. I'll simply dice them up and put them in smaller type sandwich bags for individual servings to use when cooking and put those bags into a gallon freezer bag for something more substantial for freezer storage.
They do lose crispness when frozen, but are still great for using as part of th "Trinity" of seasonings.

I used to grow Thai peppers (very hot) and this was best freeze method:
Pick the peppers and only cut the stem side off so the inside of the pepper is barely exposed to water.
Boil a pot of water and dump the exposed whole peppers in for 30 seconds for blanching. Immediately drain water and dry peppers on paper towel. Then put in ziplock and freeze. When thawed they are as close as you can get to fresh picked peppers.
Do not take out of freezer and microwave. For best results put them in fridge overnight to gradually thaw. They are hot as hell.

I grow a variety of hots like habanero, ghost, reaper and scotch bonnets. My brother in law makes hot sauce and uses them to add to salsas. I freeze mine whole in freezer bags with as much air removed as possible. The flavor and heat isn't affected. However they do get soft when thawed but isn't an issue for what he uses them for.

We put banana peppers in vinegar. Cut in half and clean the seeds, then put into a jar of vinegar or you can use pickle juice. Then in the fridge.

dried and powdered is easy and a great way to put up a bunch of extra peppers. Very useful in the kitchen too

Pretty much what I do but I will put blanched peppers on a cookie sheet , not touching each other and freeze overnight then transfer to a ziplock so they don't freeze and clump together. I also use a dehydrator to dry peppers and smoke jalapeños before dehydrating to make Chipotle peppers.

how do you smoke the jalepenos. I tried smoking poblanos and my fire was way too hot I wound up with roasted poblanos LOL

It's easy to burn them . I have an offset so use that but I just bought a cylinder that holds pellets and have been experimenting with that. I can get a 4 hour smoke with the cylinder before I need to refill it. The secret is to buy quality pellets. I went cheap the first try and the pellets left a chemical taste on the peppers. I bought thevTraeger brand Hickory pellets and they are much better.
