The sheetrock installers didn’t do too great of a job but I’ve seen worse. The countertop installer should have massaged the wall a bit with a hammer to reduce the gap on the right hand side of the backsplash

What do you mean by massage the wall? Like massage the backsplash itself?

Cutting back the drywall to the point the backsplash sits flush. I had used a grinder to do that in the pass.

It would still be uneven though. Instead of a gap between the backsplash and wall on the right side like he has now, the left side would have less backsplash “reveal” on the left vs the right.
OP, the gap in the backsplash and the one behind the cabinets are both unacceptable. There is no way I would pay for either of those jobs.
