Nice seedlings! I still have a table garden as well….
Who else has some great table gardens today?
Yeah I’ll throw a tarp over them if this happens again. Supposed to clear up today and sunny tomorrow. Fingers crossed!

I planted on Tuesday and it's been wet ever since. They look good, but I'm gonna give everything a peroxide spray soon just as a precaution. I'd hate for any sort of disease to set in early.

I'm doing the same today. One of my peppers has some small grey spots on it so going to spray everything down. I'm also going to spray the ground around my garden area with permethrin. I'm developing an ant problem because of all of the rain.

If we don't get any more rain today, I'm going to trim the bottom leaves off of the tomatoes and get them ready to go in on Sunday. I was hoping to get snap beans seeds in, but that may be another week down the road. I was able to get corn seeds in on Wednesday ahead of the rain. We're getting there...

I started hardening off my tomatoes yesterday. 2 hrs in 63 degree weather on the covered patio. It's 57 today. Is that too cold for them on their 2nd day? They've been outside for an hour and I plan on checking them every 30 minutes until the 3 hrs is up.

A few months ago decided to try seeding a few beets, and now they're coming in... which brings me to my next question: what the hell do I do with beets?

I really wish I liked beets. Super healthy for you. But to me they taste just like the dirt.

Roast them with potatoes, carrots, onions (any other root veggie) and eat as a side?

Spiced Pickled Beets
3 pounds beets
2 tsp Kosher salt
1-1/2 cups apple cider vinegar
1 cup sugar
3 bay leaves
1 tsp pumpkin pie spice
pinch of allspice
pinch of ground cloves
1/2 tsp black pepper
Roast beets at 375* in baking dish with 1 cup water, cover with foil and bake for an hour. Cool beets, peel and cut into wedges or slices.
In a medium saucepan combine remaining ingredients with 1/2 cup water. Bring to a boil and simmer 10-12 minutes. Pour liquid over beets and let cool. Refrigerate overnight.

Should be fine as long as you are poking a hole in the fabric large enough for the seeds to emerge.
Make sure you burn the edges of the holes you make or the fabric will fray vadly. I use a little propane torch.
