Pork spare ribs

Whenever we smoke ribs I always end up with an upset stomach during the night. I eat ham at least twice a week and have pork loin every so often. Neither gives me problems. Is it the cut of meat? The smoking? I just find it kind of odd

Could be the smoke. Some people don’t tolerate it as well as others.

I make a spice rub that’s similar to Tony’s basically. I add some ginger though. Nothing that I don’t regularly use

Smoked meat always upset my dad’s stomach. It’s not uncommon

It could be the smoke or the fat content. Some can’t handle high fat meats.

I can be this way at time even though this time of year I’m running the smoker nearly every weekend.
