How do you give/get strokes?

I’ve heard some pretty heated discussions over how this should work. Once saw guys come to blows at the end of a high stakes round. Old man wanted all 5 of his strokes pretty bad.
Let’s say I’m giving a guy 5 strokes:
Scenario 1: he basically starts off the round at -5.
Scenario 2: he gets one stroke on each of 5 lowest handicapped holes.

Should be a stroke on the 5 top handicap holes.

We always use scenario 2 based off the course handicap. He should get 1 stroke on each of the 5 hardest holes. That's technically the correct way to give strokes.

This is more typical.
In general, don’t play with disparate handicaps.

You would be giving him a stroke on the 5 hardest holes on the course OR you could give him 2.5 per side.
Take the two hardest holes on the front and he gets a stroke and then a 1/2 stroke on the third hardest hole.
Then, you can bet the front, back and overall.

if i am playing him in match play i dot the 5 hardest holes. if i am playing stroke play then it doesn't matter....i just subtract 5 strokes from his gross

This should never happen. Terms are discussed before the first ball is struck. After that, it’s a dogfight on the course.
There’s nothing to talk about after the round other than who is buying the first round.
Hint: it’s me. Then, I’m enjoying my friendly beers until it’s my turn again.

Does it matter if it's stroke play?
If it's match play, then scenario 2 for sure.

Really, it shouldn't matter in match play because it doesn't make any sense to say someone is starting at -5 in match play.
The real debate should be whether it makes more sense to 0 out the lower handicap or give both players all of their strokes and the holes with a difference would be where strokes are given.
Example: Golfer A has a course handicap of 10. Golfer B has a course handicap of 15.
Option 1: Golfer B is getting strokes on index holes 1-5
Option 2: Golfer B is getting strokes on index holes 11-15
I know 95% of the time, people use Option 1, but I have heard arguments for Option 2 making more sense. For instance, if there was a huge skins game with a group with multiple tee times, Option 2 would be used. So, the argument is it should be used with any number of players.

This should be the proper way.
But I have seen it backfire big time as well in skin games.
In our group of eight we use to have a guy that was a legit 20hcp. But he was a long hitter who could get lucky and hit a par 5 in two and either 1 or 2 putt and win big.

Thanks for that link. That was pretty interesting. I am the one to organize our games on annual golf trips. I am not sure why, but I never thought about looking into percentages. We do a lot of Ryder Cups. I guess we should've been doing 90% caps this entire time.

In a match play format, it may not help you if several of the top HC holes are on the back nine.
That is, if you’re getting 5 strokes and top HC holes 1, 3, 4 & 5 are on the back with only the 2nd toughest hole on the front.

This would never happen. All odd number handicap holes are on the front 9 and all even number handicap holes are on the back 9. They're set for that specific reason

I never noticed this but just looked at my card from today and damn you are 100% correct for my course.
