Can't think of a scenario where I'd hit a ball outside of the typical groove pattern.

When opening the face, the tendency is to hit further toward the toe. These type wedges help create/maintain spin on those type shots. That's why they're not offered below 54°, as most people aren't opening up their gap wedge for shots.

Why would you not want extra grooves in case of a mis hit? Seems like a good idea

Big fan of the full face. I’ve seen a considerable difference on mishits since I switched from my old TM wedge to the Callaway MD CB 58*. Honestly, mishits are near nonexistent since I switched, but, to be fair, I’ve been in a pretty consistent pattern of overall improvement for the last year so that might be the more prevalent factor in the decrease in mishits.
