The wife is due in two months and we want to take a 3 day vacation before the baby arrives.
I’m looking for a resort with a top notch spa for the wife and a decent golf course. Good restaurants is also a plus. We want a quiet place with good views. Not looking for a beach environment.
Whatcha got?

JW Marriott San Antonio Hill Country.
Greg Norman designed the course. I would have done a few things different, but I really don't even play golf
As you can tell, I enjoyed the water slide.
My girlfriend enjoyed the Pool and even got in some yoga.
I told her, we're on vacation, skip the run, she wasn't having it.
Tell Kelly LaBR4 sent you, first 2 drinks on the house.
The Grand River Suite looked to provide just enough space
But we settled on the King Room w/ a Balcony

Could probably find a good deal at Barton Creek. They always have a package for expectant moms. Golf is great, Spa is great and rooms are so-so. Overall it's a nice place, however.

I walked in there one time and the place was dead. Is the food good and how is the spa?

Barton Creek Resort and Spa in Austin. The Fazio Canyons Course is typically rated in the top 2 or 3 public courses in Texas (its rated number 1 on some). We found a sweet Groupon last August and stayed there for like $109/night. They were renovating their Palmer and Cransahw courses when we were there. Not sure where that’s at.
The Hyatt Hill Country Resort/Wolfdancer Gold Course is pretty sweet too.

Beau Rivage, play Fallen Oak, get a gulf facing room.
MWO: Best spa on the gulf coast
IMO: Best golf course on the gulf coast
LINK
Plus: 1 hour closer than San Antonio & Austin.
If your heart is set on Texas, check out The Woodlands. Stayed there a few times, nice resort, pools are legit, good surroundings and Panther Trail is top 10-20 in the state. 18th hole still haunts me from Ping AJGA

I pass that place on the way to my hunting lease. I've always wanted to stop and play.

Great views.
Never been to the spa.
Nice resort.
NOT a top notch golf course. It is "meh" at best.

Not sure of your point, but if this is any indication of what golf course you should play, Fallen Oak is ranked 16th of top resort courses in USA. San Antonio isn't ranked.

ETA: Fazio course at Barton Creek is ranked still < Fallen Oak (both design by Fazio)

Fallen Oak is in my personal top-5. I typically think Fazio is style over substance. I didn’t want to love Fallen Oak, but it’s fantastic.

JW Marriott San Antonio Hill Country.
I was there with my biological kids.
As you can see, they also loved the outdoor beach area.
And the children's water park.
Then we had some fun "Adult Time".
And we saw your "Girlfriend", too.
