I have the Witcher III and it has actually been a minute since I played it. Might just pick it back up again.

I can't speak on ME:A, but I've heard it kind of is a letdown and is comparable to DA:I, which was okay at best.

I love the Witcher and if you haven't played the two DLC's they are worth jumping back in by themselves. I want to start a new save at some point, I just need the time.

Yeah, Witcher is pretty. However, I'd get Bloodborne or DS3 (not open world, but still a great game)

I would characterize the Souls games as open world, it's obviously a different type of open world than something like GTA but it's an open world, more in the Zelda vein

Horizon Zero Dawn is really good. Witcher 3 is excellent.

Tried Witcher 3. Tried the abortion that was DA:I.

My most common thought while playing them was "not Skyrim". If only the would re-do Morrowind.

I didnt play Skyrim until the remastered. I like the game overall but the combat is terrible.

Witcher's combat is pretty bad too but better than Skyrim.

That's where IMO Horizon and Nier:A come in. Both have excellent combat systems in them. Such a joy to play both.

while technically open world, you have a pretty linear path you have to take through them.

i'm pretty sure OP is looking for something more like Skyrim/Witcher 3/Horizon/Shadows of Mordor

They are very much the same type of game. I'm enjoying Andromeda, but if you haven't beaten Witcher 3, by all means play that one first.
