Trying to get into WoW

The SO is really into it and I'd like to be able to play with her. Is it easy to pick up or is the learning curve pretty steep?

Super easy to pick up and play. Figure out what role you want to fill: Tank, DPS, or Healer. Keep in mind that some classes can fill multiple roles depending on spec.
Don't worry too much about gear/rotation etc until you get to max level.

if its your first playthrough ever, i would start from scratch just to help learn your class and get the hang of rotations and mechanics

The only time I would use my character boost on a first character would be if I'm playing with someone who already has a max level character. Leveling in WoW is fast, and you'll enjoy having that level 100 character in your back pocket when you create an alt.

Yeah I'd for sure level something all the way just for no other reason to see what you like and don't like then use the boost on another one. I'd hate to see you boost a char and hate it

It depends. If your SO already has a high/max level character it may take awhile for you to play with them.
I would guess it would take you around 60-80 hrs to get from level 0 to 110. That being said, it's a huge world and it's fun to discover things.
My main advice would be to timebox things (ie only 2 hrs tonight) as otherwise it can quickly suck up a lot of time without you realizing it.
