I'm reading through an overclocking guide on ocn. Do I want the cpu core voltage in offset or fixed mode? This guide gives you the option but I don't know which would be easier.

Start with fixed so that you know the exact stable voltage for your overclock. Offset mode ultimately puts more voltage into the CPU than you specified, so it's not a good test for the lowest possible stable voltage. Once you find that out through fixed, you can change it to offset.

I'm about to run Prime95 (set on "Blend"), what number should be in the "number of torture test threads to run" box?
Also, what temperatures should I be looking/hoping for (roughly)?

Press the "C" button and the character will walk automatically without holding down "W". It's awesome.

Just run Blend with the default numbers -- should be 8 threads.
As for temps, I'm not sure. I've yet to run a haswell on the Hyper 212, but reports on the internets seems to show it's a capable cooler for overclocking Haswell. If you hit over 80C after about 15 minutes, let me know. If at any point you see it go above 90, turn off Prime95. I have a few tweaks in mind if that happens -- related to Z87's auto/adaptive voltage.
What are you using to monitor your temps? I use realtemp.
Too bad you don't live in BR. I could optimize the hell out of that setup, starting with a delid.

Have you used any mods yet? If not, go somewhere outdoors in whiterun and take a screenshot and post it. I want to compare it to the layers of mods I've installed. Tell me where you took the screenshot and I'll go to that exact spot and replicate it.

I have CPUID HWMonitor and the Asus AI Suite (just to have a second number for the CPU temp) running . Should I just download realtemp?

HWMonitor is fine. I've always hated ASUS AIsuite though. Used to give me stupid uncalibrated readings on different components and popup warnings.
