Worth what for what? The nvme drives are faster than regular SSDs, but for strictly a gaming PC, it's pretty low on the list of things to spend $300 on.

M.2 is just the interface. M.2 can still be SATA.
You want an NVMe drive. Yes, M.2 NVMe drives are worth it. They are extremely responsive with far less controller latency over a SATA drive.

Curious if you guys can help me. I have a 1080ti that's going in my work desktop but I couldn't resist so I brought it home first. I used DDU to clear my drivers and replaced my 1070 with the ti. I've played R6 Siege and PUBG since then and I'm not getting any performance difference. Am I bottlenecking my R5 1600 at 1080p or did I potentially do something wrong swapping them out? Rest of build is R5 1600

Correct. Vysnc is off in game and in the Nvidia control panel.

I'm using in game overlay for Siege and my monitor overlay for Pubg.
I was averaging 120-140 fps on high with the 1070 on siege and around 80 or 90 in pubg. I'm getting exactly the same with the 1080ti.

Crank up the settings a lot and then compare the two cards at those higher settings. Or turn your settings down to potato level and see if the framerate improves. That will determine whether or not there is a cpu bottleneck. Seems doubtful but that's the way to confirm. CPU gaming performance is usually tested by using medium to low settings so that the GPU is taken out of the equation.
