Why do people 4x GPUs that aren't made for it? There is a benefit for games that support it, but there is the fun of OC and benchmarking. I spent about 12 hours benching my new gear and it was fun as hell.
My CPU has lost 5% of its OC cap over the year and so I want to replace it with bigger and better. Adult LEGOs.

8700K if you want max OC/gaming performance and 6+ cores, they will all hit 5GHz, mine can do 5.2.
Other option is 7820X ($559) 8c/16t and the X299 platform.

Maybe, that might be pushing it though. I'm 25hrs in and not even half way through the main story. Granted I did a ton of exploring but still feel like 8-10hrs might be pushing it.

True but the bandwidth to the CPU are still shared. You will be throttled for a better word correct?
Now while gaming you shouldn't need x4 on your drive but just saying you are still limited.
