White Orchard is no different than the Hinterlands except there are 400 less quests.
Wait til you get to Velen.

The game has locked on me several times. In 10 hours, I've probably had to hard reset about 6 times. Don't know if that is a games issue, bad card issue or bad driver issue.
I've heard other people complain about the latest drivers. Mine have been ok, but I did get a couple of crashes over the weeks. Nvidia fricked up 2 releases in a row.

The game looks great but the hair looks like crap. The whole hairworks thing didn't work.
Did you actually turn hairworks on? You seem to be describing the crappy default hair that looks more like strips of greasy fabric.

Pretty sure I have it on. I'll make sure after my break.
Not saying it looks horrible except that one bit I talked about traveling from White Orchard to see the Emperor.
Hey! Where did everyone go after White Orchard? I just got owned in a cave full of little angry gollums. I still haven't removed my normal instinct to RUN into the fray style of RPG gameplay.

I'm still totally lost on the whole inventory, crafting, alchemy aspect.
Damn this game is bleak. I did like how areas would improve in DAI after cleaning out the bad guys.
The last scene at the inn in White Orchard was harsh.
Stupid peasants.

Yeah, the Witcher series is all about shades of grey, though this one is a bit more bleak in general compared to Witcher 1 and Witcher 2 a little bit too.
How are you lost on crafting? Basically you just need to make most everything just one time and you have them forever for the potions and dedoctions. Just need to rest and have Alchoest in your inventory to remake the potions and whatnot. Sword Oils are forever too. You need to go to a weaponsmith to craft weapons and armorsmith to craft armor.
There is a bug introduced with the last patch that is causing issues with producing some mats and mutagens, hopefully they fix it quickly.

It takes a bit of time but it's not too difficult to figure out after some experience. I would highly recommend watching a video tutorial on mutagens, though. I didn't know how to use them properly until I was around level 10.

I keep reading people stating that the quests are so much better than DAI. How?
Same run there bring me that stuff.

Guess I need to read up on potions and such because I am just getting destroyed in Vellen.

Don't worry, the quests get better in celeb. The bloody baron storyline was great. And the Keira quests were also pretty diverse, plus there is always sexy time

Well you will have to skip certain battles because they are too high regardless, high level stuff is mixed in with low in Velen. But you can't really charge into huge groups in this game, you will get owned.
On a side note, did you get all the places of power in white orchard? Because that would give you a good base of skills to help you in Velen.

Did everything in White Orchard.
It is just so different than pretty much all RPGs that I can be sent off on a level 5 quest but to get there, I need to pass through about 12 areas that have packs of murderous monsters WAY stronger than me.
Where is the damn smith in Vellen? I'm getting tired of hopping all the way back to White Orchard because I broke a shoe lace.

Explore Velen, all the populated areas. See something stronger than you, or something you just don't feel like fighting, just run.

I'm convinced 3 Gargoyles could destroy the entire Wild Hunt army.

Here are a couple interactive maps for Velen/Novigrad and Skellige. You can set them to show you however little you want. If you don't want map spoilers I'd say just follow the main quest chain to get to the Baron, his town has an armorer.
