I can and then I drop off hard. Just a lot. And even though these games are for the most part directionless Elden Ring is on another level and it becomes too much.
Have had some great moments with it so far, but it hasn't fully grabbed me yet.

I've enjoyed Elden Ring a lot, though I agree that it can be a bit much. Im at the end of my second playthrough and will be taking a long break from it when I'm done.

I've played it through twice and haven't touched it in a month or two. Just piddling around with souls glitches in DS1 and making my attempt at a no death run.
I'll get back to it again eventually. It's suck an amazing game.

My big problem is I'm too stubborn to admit I might be under leveled for a boss and will beat my head to a pulp against a wall for days before finally giving up on the game for a while.

Just go explore some more. There is just so much in that game.

Well then your only option is to git good. Really really good.

Just offed the Lord of Cinder. Couldn't remember if I needed to do him in to get to the ringed city, but I just got it out of the way regardless.
Still have to do some lategame shenanigans with the dlc areas and the nameless king.
Ashamed to admit that I am currently getting bodied in the opening zone of the painted world. It's been a minute since I've played this area and those norse looking mofos and their giant wolf pals are having none of my shite.
Insofar as Elden Ring is concerned. I can see where the scope of the game is daunting and could diminish the desire for repeat playthroughs. It's an incredible spectacle the first time through but the amount of fluff to achieve a true open world experience does feel distinctly different from the lean focused feel of the previous entries in this 'soulsborne' genre.

The funny part about elden ring is once you finish the first play through, you have likely leveled up so much and collected so much shite that you can legitimately complete a second run through only fighting the required bosses in just a few hours.

this Nameless King boss can eat a dick. Talk about having to be perfect.
I've been able to defeat the first phase a few times which is hard enough as is considering the difficulty with maneuvering the camera, but then if you make one bad move against the boss on the ground, it's over.
At least the run from the bonfire isn't bad, and there is one enemy near the fog door that I can get 2500 souls per attempt. Every time I die I am able to build up my souls count for more leveling lol

I one shot NK my second playthough. He tormented me my first time. But that's not to say I was that much better. Sometimes the pattern of the fight works out in your favor.

I was disappointed in NK on my first playthrough (as I was with almost every boss in the game). I think I two-shot him.
Admittedly, I ran Sellswords and I found out (after the fact) that they're pretty OP. I just like dual-wielding.

Hardest boss in the game was Gael, easily. Whooped my arse. Felt like an Elden Ring boss.

Gael is top 3 boss in the series imo. Maybe the best.

hardest DS3 bosses for me were Pontiff and Friede. Pontiff still gives me trouble, my brain just doesn't work when the clone comes out and his timings are so strange
never had issues with NK or Gael. Once Gael clicked I beat him without getting hit, probably the best designed fight in the series. so epic and cinematic

When Friede hit her third phase, I just put my controller down and walked away. That fight broke me for a bit.

I had enough DPS to burn the clone before it even moved, so that fight came easy to me.
So cool to me how people's experiences differ with these games, but at the end of the day they're some of the best games out there.

I never finished that DLC. Guess I should back to that at some point.
