You could try

Dragon Quest 11 - turn based and has stellar reviews
Nier - more action but has some RPG elements
AC: odyssey - basically an awesome ancient Greece rpg action game
AC:Origins - similar but Ancient Egypt
Soulsborne games

Nier is a fantastic game. 100% that one.

Maybe I’ll look into AC again. I was burned out by previous ones.

I was burnt out on AC as well but some of my buddies convinced to me to pick up Odyssey. I just started last week and although it's not the same caliber of a Witcher 3 type game I'm enjoying it so far

Some more niche recommendations that you might like:
Legend of Heroes: Trail in Cold Steel - Feels similar to Persona, but without the production value. Has better character development and world building imo.
Utwarerumono: Mask of Deception and Mask of Truth - Duology. Strategy RPG that's fun. Think more Fire Emblem or Final Fantasy Tactics than Disgaea.
God Eater 3 - It's in the same vein as Monster Hunter but with a heavier story/character focus
Atelier Lulua
Death end re;Quest

Ports:
Tales of Vesperia
Yakuza Kiwami and Yakuza Kiwami 2
Dragon's Crown Pro
The Last Remnant Remastered

Each recommendation (in each category) is in order of how strongly I suggest it.

I got Odyssey a couple of weeks ago and I can't put it down. I hadn't played since 2 or 3, so I was very pleasantly surprised at where the franchise has gone. The old games were fun for about 1-2 hours and then things started getting really repetitive.
