Trails in the Sky 1st Chapter is 9/10 100% play it
Trails of cold steel 1-4 are all really good games following one main overarching story throughout all 4 games. The first one while good though lacks a bunch of quality of life things so you will need to endure a bit of friction. Once you get to to 2 its very smooth
Tales of Bersia
Granblue Fantasy Relink
Xenoblade Chronicles DE
SMT 5.
Feel free to add any you wish, Im always looking for new good jrpgs

If you haven't played it the Atelier series is one I love. It's Japanese as crap, and battles are super easy, but the alchemy portions are addicting. One of the gimmicks with the older games was that you had an in-game time limit to beat the game, the newer ones got rid of that starting with the Ryza games. Start with Atelier Sophie if you check this series out.
Eiyuden Chronicle is another great one. It's a Suikoden 1 and 2 clone so if you liked those games you'll love this one.
I enjoyed Blue Reflection and Blue Reflection Second Light. Again, super Japanese magical girl games with pretty easy combat but I enjoyed the story in both games .

Atelier Sophie: The Alchemist of the Mysterious Book
Is that the one that you recommend as the entry title? There is a bunch of these games lol

Yes. It's the one that got me into the series. Again, it's a Japanese magical girl game so don't expect a masterpiece but the alchemy stuff was addicting to me.

Also another one I highly recommend but it does come with * is resonance of fate.
Its generally considered one of if not the most difficult JRPGs of all time and is over 200 hours long but it is such a good game if youre willing to have a pretty frustrating first 30 hours because they dont explain the combat well at all and its extremely complex. Turn based combat with guns and trying to position your 3 characters in the field in certain ways you can execute super attacks.

Probably doesn't quite fit this category but I recently downloaded Xenoblade Chronicles 2 - switch 2 edition and started it last night
I played the original switch version years ago and never got all the way through it. Starting over. I like the style of the game.

Great game it’s absolutely amazing. It’s themes and battling philosophies with each having their own merits for how things should be really resonated with me. It is an exceptionally well written game which you’d likely never guess by looking it because it goes full anime art style lol which I love.
My one minor gripe with it is the sort of gatcha style way you pull new blades in the game.
Btw the prequel DLC Torna is also FANTASTIC, but it’s the type of prequel that you must play after you beat the main game
It also definitely fits the thread. It’s a jrpg through and through lol it just does a slick job at disguising a lot of the traditional things about the genre into the blade system

Have played about 2 hours of the game. It’s really really fun and pretty addictive
Does the system continue to build and new things added or have I seen all it offers mechanics wise?
