Yeah but if I remember right, Irish culture doesn't have that and I haven't figured out how to change culture.

It’s a high medieval tech. Can’t be researched before 1200. Culture has nothing to do with it my baw. Irish can get it, just gonna take a long arse time.
There’s another one you can get earlier that gives your primary heir the vast majority of your titles, making the split a lot easier to handle. Can’t remember what it’s called, but again, every culture can research it.
Also, to change culture you have to rule over lands of a different culture and do an event. Otherwise take your heir and have them be tutored by someone of the culture you want to change to and have them switch to that culture. Once you die and become your heir, you have the new culture.
Beware that will cause problems with your vassals though especially with a new ruler as they’ll want someone of the same culture to be their lord and they’ll either try to kill you, rebel, or replace you with someone else.

All 3, there's a lot of detail and different games take place in different historical periods. There are also ones that are just straight fantasy, like Warhammer, but I've never played those.

I’d you have roughly 200 hours to comit Witcher 3 bar non especially if you can play play it pc. The pc mods greatly improve an already amazing game but be warned it’s MAJOR time sink
Persona 5 another classic but we warned a bit different genre with almost the same amount of time sink.
A more casual time sink but still one of the best decades best is Ghost of Tshushima
You can expect the three to run

50ish.
Imo surgery is the perfect time to play the Witcher 3s and Persona 5s of the world doped up on opioids

I just recently started playing Destiny 2 and there is a new expansion coming out in Feb.
Halo Infinite is pretty good as well.
