I second this. I suck at parrying in most games, whether it's Breath of the Wild or Elden Ring or Sekiro (which is why I haven't managed to get very far in it just yet). When I started DS1 last night I landed a parry/critical on the first attempt and only missed when I wasn't paying attention after that.

While parrying is extremely important, I limit it to strong, midsized enemies like silver and black knights. Most bosses either can't be parried at all or can't be riposted (Gwyn being the massive exception), and most smaller mobs just aren't worth the aggravation. As an example, I never parry hollows. Much simpler to just equip a 100% physical shield and let their attack bounce before attacking.

I think part of my problem was when leveling I upgraded a little of everything for a well rounded character. I saw later that this is a mistake and you have to stick to a certain build so it probably didn’t help my character sucked

Usage of souls, in order of importance, in my opinion:
1. Increase the stats necessary to meet the minimum req for your chosen weapon, and no further
2. Upgrade said weapon (buy small shards from Andre to get to +5. Large shards, chunks, and slabs can all comfortably be found as you play)
3. Level vitality as high as you need to compensate for the frequency of your mistakes in boss fights
4. Level endurance if you find yourself running out of stamina during boss fights
5. Level the stats associated with your weapon's damage until the soft cap
6. Level vitality to the soft cap
7. Level endurance to the soft cap
8. Upgrade armor, I guess. I've never done it after my first playthrough. But you're probably beating the game about now, anyway.

you definitely identified your main issue.
My strategy for leveling, which might get blasted for whatever reason, is as follows:
load a ton of early points into strength or dex for 10 or so levels (just made that number up because each game is differently). If i'm going pure strength or pur dex build then I might bump these up even more. If I'm going balanced then I might do 5 strength, then 5 dex, then 5 and 5 again or something.
After I bump those attack stats up, I'll worry about health and stamina.
This is all assuming I'm playing a game for the first time and have no clue when and where certain weapons/weapon types will make an apperance. If I cheat and look them up, or if I am playing a game for the Nth time, then I might be able to strategically level up based on what I need for weapons that might be available early or whatever.
My thought process is that I am able to protect myself and not die much easier by hitting the enemies as I hard as I can and kill them as quickly as possible vs trying to build up my health early and trying to survive.
If you are doing a spellcaster build then you can swap str/dex for int/faith. If I come across a particular spell that I think will be useful for my STR or DEX builds then I might build up that particular stat to the minimum needed to utilize the spell but usually I just don't even bother since it's not my preferred way to play these games.

It’s 100% the correct thought process, with a caveat that I’ll cover at the end. The reason I generally advise people to spend their souls in the order I laid out is that, outside of a couple of exceptions, the level scaling for low upgrade weapons (let’s say upgrade level below +6) is pretty terrible. Early game, five levels in a damage stat might give you 7 or so extra damage. But those same five levels might mean the difference between getting one shot every time you make a mistake and it taking two of the same boss hits to kill you, giving you the chance to recover and continue the fight, giving yourself more time to learn. Everyone makes mistakes. I can usually one try every boss in the game, but even I very rarely manage a no hit kill. If a newbie is glass canon-ing themselves into a corner that requires perfection, they are just going to get frustrated.
Now, that doesn’t mean they should turtle. One should note that in previous posts, I mentioned wearing the elite knight leggings alone for the extra poise for Capra. I always play in fast roll range, never even mid. But even then, you need to be able to face tank at least a hit or two before dying. Anything beyond that is lagniape git gud territory, in my opinion. But being able to tank a couple of boss shots? I would consider that mandatory for all but the most experienced of players.

Yeah, that's the hard part. My tendencies are the same way, seeking balance. But it pays to be unbalanced in these games a lot.

Can I get help for DkS3 in this thread? I just started and have questions.
Is there really no map?
How do you travel between bonfires?
Jumping seems to suck, is the jump attack not possible in this one?
Are guard counters not possible in this game?

I’m not at my computer, but it should be super obvious to my recollection. With that said, you can’t level up or fast travel until you reach the hub area. Jump attacks have never been my cup of tea, so I’ll defer to others. Guard counter… expound?

No map, but you don't need one since it's all pretty linear. There are secrets areas you'll have to find or look up though.
When you activate enough bonfires you'll see the option to fast travel.
No jump attacking. Yeah, we know. You can hit a button and jump. You have to for some stuff. But yeah, it's a limitation of the older games.

You really don't need a map. Just get a feel for the game and explore.
