Best Pokémon game to start with?

My 7 year old is just starting to get into Pokémon due to hearing about it at school. He’s starting to collect the cards and is asking about getting a game for the Switch.
I know nothing about Pokémon so any suggestions on where to start? There are a ton of games out there and I’m not sure what would be considered a beginner game. Thanks.

Since he's likely collecting the modern cards, start him with Sword or Shield.
If you start him with some of the older ones, he'll be missing many of the new Pokemon he would get from modern card products
Edit: But I'm bias towards the first 2 gens (Blue, Red, Yellow, Gold and Silver), since that's mostly what I collect as far as cards go

Sword/Shield are probably the easiest RPG Pokemon Games they've made. Every generation has simplified gameplay and streamlined content. My nephew was 6 when he got it and he didn't like to read dialogue, he just spammed buttons to fast forward through it all, and he figured out how to get to the end pretty well all on his own.
There are two DLC packs for Sword/Shield right now that are also pretty streamlined content. Plus, it's a Pokemon game, so you can always just roam around and do whatever you want at any point instead of progressing the story line.
They are about to release the remake of Diamond and Pearl for Switch in November, I don't know if they've retooled the mechanics to be like Sword/Shield or not.

Pokemon Let's Go Pikachu/Eevee are excellent games to start with.

I played both Sword and Let's go recently after not playing a pokemon game for a decade or more. And had way more fun with Let's go.
Having said that, I think your kid might have more fun with Sword since it has a shite ton more pokemon in it that he/she will likely be more interested in. Let's go just caters to the older crowd who are stuck in Gen 1, like me

Leaf Green/Fire Red for first. heart Gold/Soul Silver for second. Both are hard to find but both are excellent.

As others have said, if you have the switch, go Sword/Shield or one of the let's go editions.
Brilliant Diamond and Shining Pearl will also be out this Holiday. It will be the most recent of the core series.
