Zucchini Keto Lasagna (photos)

During my Keto Diet days (I'm about half way there, was 232 - goal 180), I have not cooked many things I wanted to share, but tonight seemed like a dish folks might want to see. To make this (280 calories, 4.5 grams carbohydrates), I substituted thin sliced zucchini for lasagna noodles, and limited my tomato to one medium tomato that I thin sliced.

Here is what I did (2 1/2 servings)

Need:

1 - small zucchini, sliced thin on the mandolin
2 Tablespoons onion, sliced thin
2 Tablespoons green bell pepper, sliced thin
6 Mushrooms, sliced thin
1 medium tomato, sliced thin
1 cup Italian Sausage - 1/4 - 1/2 inch pieces pre cooked
1/2 cup Parmesan Cheese- grated
4 - eight inch diameter, thin sliced rounds of Mozzarella cheese.
1 Tablespoon Italian spice blend from Sam's
2 teaspoons Lawry's Garlic Salt
1 teaspoon oregano
3 teaspoons of olive oil



Started by slicing the zucchini very thin on the mandolin, adding 2 teaspoons of olive oil, the Italian Seasoning, Lawry's Garlic Salt and Oregano. I mixed to coat the zucchini and set it aside.



Then I prepped the other vegetables.



I lubricated 2 oval oven proof casserole dishes and one oven proof round bowl with the remaining teaspoon of olive oil, then added the mushrooms as my bottom layer.



Then I added a solid layer of zucchini slices, the peppers and onions.



Then a thin layer of tomato.



And my pre-cooked Italian Sausage (from the freezer)



Next another layer of zucchini, mushrooms, and tomato.



Topped with Parmesan cheese



and a final layer of Mozzarella



The dishes went into the oven at 350 degrees F for 30 minutes. Then rested for 20 minutes after I pulled them.







Here are shots of what the finished dish looked like.









I have grown fond of zucchini and am 100% certain I will reach my weight loss goal (52 pounds).

I understand this is not Lasagna, but very good. The wife (MHNBPF) has already requested this dish again.

We make this all the time.
next time try roasting your sliced veggies on a sheet pan in a hot oven to brown them up and cook off some of the water, then assemble and bake

I am getting back on my Keto routine soon, as biking season will be coming to an end before long.

Looks great. I love doing red sauce with vegetables and meat instead of pasta.

Are tomatoes not keto? I wouldn’t have guessed that.

Tomatoes are touchy. 5 cherry tomatoes
are about 2 carbs, for reference.

Thanks TF for answering the question.

Yes, tomatoes are a vegetable that is on the edge of having too many carbs. So are onions. Both have sugar, which is a no no. The wife knows all of this stuff, so I get good advice when I begin to stray away from Keto Land.

I have taken statin drugs for 30 years. My cholesterol is the best level money can buy.
