Actually, i was a manager in college. I got bonus checks based on food cost etc.

I went to the Saenger a few years back and ate at that Popeyes that used to be next door before the show. A small group of locals came in and asked for a bag from the cashier. She gave them one and they walked straight to the condiment bar and emptied that fricker out of ketchup, salt and pepper , plastic utensils and anything else they could stuff into the bag. Shopping completed, they then walked out.

I never work in the service or food industry, so enlighten me on something. How is this a metric to determine your bonus? Did you set the prices on the food? Where you rewarded for denying people condiments to keep food cost down? Did you save food scraps and re-serve them? I just want to know how a business that sells food saves expect a manager to save money on food cost when he/she is not purchasing the food?

Bonuses are based on costs, labor, food, liquor, etc. there are many ways to control costs. Labor cost can be controlled by sending cooks/servers home when it is slow, making schedules correctly, and so forth. Food cost can be controlled be sample prep be done correctly (dont prep too much, order right amount). Also, when fatass nurses want 4 extra dressings for their fried chicken salad, charge them. As someone said earlier, small amounts add up quickly. 200 guests per day want two extra dressings. Thats 1600 ozs of dressing. Your 16 oz bottle of kraft is 3 bucks. Do the math.

Zaxby's is nasty. Our son worked there in high school and we would not let him bring that shite back to the house after work because it stunk up the refrigerator.
