Your go to duck breast marinade

looking to sear some duck breast and would like opinions on a marinade?

You don’t necessarily have to marinade. Unless it’s a spoony or something. But if you want too Worstershire is good. I’m not a big fan of Allegro or Dales, but its not bad if you don’t let them soak long. You can also dry brine. Which is just salting on the counter 30 minutes prior, rinse, dry and sear/grill.


I recommend Hank Shaw’s book to anybody who cooks duck, wild or domestic, His marinades depend on the flavor he’s going for. It is fantastic. But you can find just about all the recipes on his Hunter, Angler, Gardner site. LINK

Chopped green onion
Grated ginger
Grated garlic
Soy
Sesame oil
Salt
Pepper

Remove skin & marinate 2-4 hours, then grill until desired doneness! I prefer medium rare.

Eta: do not discard the skin. Crisp it seperately in pan with a sauce pot on top to press the skin and create a crispy duck skin chip.

Mine is very simple, but we love it.

Score the fat in a cross pattern, do not cut into the meat. Lay duck breast in a shallow dish fat side up. Pour balsamic in the dish to cover the meat, not the fat. Rest for 20 minutes. Get a cast iron very hot (no oil). Place fat side down for 4 minutes, flip the 2 more minutes. Let rest before slicing. You’ll want to use a screen to cover. Again, very simple, but that’s how I do it.

If you want to get different with it you could try Korean BBQ style. My Dad loves it and I do it every now and then.

mix together:
1/2 cup white sugar
1/2 cup soy sauce
1/2 cup sesame oil

I mix together orange zest, orange juice, lime, a little tequila and some fresh rosemary. Marinade for about 2 hours and then grill. I leave the skin on the breast.

When grilling duck breast, it's a preferred method. You cannot render enough fat & create as nice a crispy skin on a grilled duck breast as you can a pan seared duck breast.

I usually crisp it separately in a pan under a press. Never waste the best part of the duck.

Depends on what you want, but this is a good, easy marinade.
