Your favorite gumbo ingredients?

Will be putting mine in a competitionin a couple months and I've been trying all kinds of different recipes. Any ideas on your favorites??

My favorite flavored gumbo is a big Snow or Blue goose in the gumbo. Makes a stronger flavor gumbo than a hen or ducks...

Add some fatty smoked sausage and tasso, onions, grean bell peppers, a little celery, garlic, and medium roux. cook dat til the goose breast meat is about to seperate by itself.

you'll win any competition in Southern LA

Oysters, they go well in seafood and chicken gumbo, they add a richness and flavor you can't get from anything else. If someone doesn't like oysters they are a tasteless cretin who doesn't deserve good gumbo, so to hell with them.

The old Roussell's on Airine Hwy in Laplace had the best chicken, andouille and oyster gumbo ever, I miss that place every time I drive through Laplace.

I agree. My favorite gumbo is probably a duck, andouille, and oyster gumbo.

Shrimp in good ole unadulterated shrimp gumbo with a good strong shrimp stock like my own or what they serve at Don's downtown Laffy.

Andouille is my favorite ingredient for a poultry gumbo. In fact, when I make it, I use extra and I freeze my own servings with little poultry and mostly the andouille. I'd just as soon have andouille gumbo.
