I like it just smothered down with onions and black pepper like my Granny used to do it.

Veggie Tacos:

Saute squash with portabello, garlic and onion

make a lime ginger chipotle aioli.....mix 1/2 mayo with 2 tbl olive oil, add 1 tsp ginger and 1 tsp chipolte and squeeze half a lime in there and mix.

serve on corn tortillas.....add fresh basil, mint and cilantro to really make it sing.

If you have to have meet then saute some pork or chicken in there.

Slice, dip in egg wash, cover in corn meal and fry. Or squash casserole.

Yeah, my cracker roots are there for all to see.

My squash plants are putting on pretty good now in the garden. Fried squash is second only to fried okra.
