I got the 28" with the 2 side burners.
I cook on it at least 4 times a week.

I love the Blackstones... if it came with a temperature gauge/indicator I'd probably buy one.

Same. I fear the novelty would quickly wear off. But I've also been considering getting rid of my gas grill I rarely use and I could use the Blackstone for everything I use it for. I pretty much only use it to sear steaks and chops I sous vide.

You aren't "that" guy until you start asking us the best way to smoke a brisket or how to fry chicken on the Blackstone.

Brisket needs to be in sous vide at 185 with liquid smoke for at least 48 hours, then get the Blackstone as hot as possible and drop it straight from the bag onto the cooking surface. Watch out for the splash zone. Throw some wood chips on and cover it all with a cooking dome.

As the starter of the original Blackstone thread in 2016 I get a lot of pleasure from these threads. I posted 550 degrees from my IR thermometer back in 2016.
